Smashing Mashed Potatoes
Creamy, smooth, delicious. These mashed potatoes are made with a small list of ingredients. You will not miss the gobs of butter that go into traditional mashed potatoes. Go ahead and indulge in these. You will have no regrets!
- 6 yukon gold potatoes clean, unpeeled, and whole. I prefer organic buttercream potatoes by Cinacia. 2 lb bag.
- 1/2 cup raw whole milk I use Organic Pastures brand.
- 3 tbsp butter organic pastured
- 1 tsp real salt
- 1 tsp white ground pepper
Steam or boil potatoes until soft (about 30-40 minutes until you can easily poke through them with a fork). When potatoes are done, drain the water, place hot potatoes (unpeeled) into a large bowl. Pour butter and milk over the potatoes. Mash the potatoes with a potato masher. Add salt and pepper.
Note: Other recipes ask to peel the potatoes before or after boiling the potatoes or they ask that you cut the potatoes prior to boil. I skip that step because 1) When using organic, it is really important to consume the skin of the produce. It provides the fiber that your gut so desperately needs and 2) it is time consuming and 3) I find it unnecessary.
