This recipe is so simple, I was almost hesitant to create this recipe post. I decided to go ahead just to show you how some of the most delicious recipes are actually easy to make.

Here is a traditional eggnog recipe that is made with nutrient dense raw milk, raw cream, pasture raised eggs and other real ingredients.

It is a beverage loaded with enzymes, fat-soluble vitamins, and natural probiotics when you make it this way.

Organic or not, from grass-fed cows or not, pasteurized milk is not only lacking nutritionally, taste watered down, it is also hard to digest for most people and is just not worth it.

Raw milk- from animals pasturing on regenerative soil- is delicious and easy to digest if you acquire it from a trustworthy source.

When dairy is pasteurized, the milk is denatured; the majority of these healthy enzymes + bacteria are killed off.

Raw animal-based products are not only nutrient dense, but they are also safe to enjoy when you take simple, common-sense precautions.

Did you know most people who have milk/lactose sensitivities are able to drink unpasteurized milk without any digestive issues because raw milk actually comes equipped WITH the enzymes needed for the human body to break lactose down and access all the delicious nutrients.

Feel free to adjust the measurements. If you like your eggnog sweeter and thicker, you can add more cream and more maple syrup. It is also ok to add around 5 egg yolks or 3 eggs. It will still taste good.  It is up to what you prefer.

This raw version is not only nutritious and delicious, it is so much easier than the modernized version of using pasteurized milk and cooked eggs. Here is what you DO NOT have to do:

INSTRUCTIONS  (for the modern processed denatured version)

  1. In medium sauce pan over low heat combine milk, cream, maple syrup, cinnamon, nutmeg and salt. Heat mixture to 150 degrees F. (Small bubbles will start to surface around the edge) Turn off heat.
  2. Add egg yolks to a small bowl and whisk by hand for one minute trying to aerate the yolks just slightly.
  3. Remove 1-2 cups of the milk mixture and very slowly pour a trickle at a time into the egg yolks while whisking egg yolks. Slowly bring the temperature of the egg yolks up to 100 degrees F.
  4. Very slowly add the egg yolk mixture back into the milk, again a trickle at a time while whisking the entire time. *You do not want to cook your yolks so go slow.
  5. Turn the stove back to low and bring the temperature of the mixture back up to 150 degrees F. It will start to thicken as you whisk it. *Remember, low and slow!
  6. Once temp has reached 150 degrees F remove from the heat and mix in vanilla.
  7. Pour eggnog into a pitcher and refrigerate for at least 6 hours,

 

Before coming to America, I grew up drinking raw milk.  I stopped buying “organic” milk in 2003 when I found a nutrient dense replacement to nature’s perfect food; breast milk. I “remembered” this forgotten commandment.

This nugget of information is one of many forgotten commandments “they” don’t want you to know.

Instructions
  1. combine milk, cream, maple syrup, cinnamon, vanilla extract, nutmeg and salt.
  2. separate the egg yolks from the whites. Gently whisk the yolks by hand for about a minute trying to aerate the yolks just slightly
  3. While VERY SLOWLY pouring the yolk into the milk and cream, mix gently making sure all content of mixed well.
  4. Pour eggnog into a pitcher and enjoy! If there is any leftover (usually there won't be), refrigerate. It will best to drink it within 24 hours.
