  1. Preheat oven to 400 degrees F.
  2. Lightly coat 4 muffin cups (I use silicon cups or Ramekin) with coconut oil.
  3. Fit 1 slice of turkey bacon into each muffin cup (bacon will hang over edges of cups).
  4. Crack 1 egg into each cup.
  5. Bake in middle of oven until whites are cooked but yolks are still runny, about 13 minutes.
  6. Season eggs with salt and pepper and remove cups carefully.
  7. Sprinkle with chopped basil, scallions or parsley.
