Crushed Potatoes with Shallots

Don’t know about you, with a tight schedule I tend to opt for simple and practical yet delicious and healthy recipes. This recipe is a hit with the whole family.
This recipe produces potatoes that are crunchy like french fries yet delectably tender as the baked version.
It is baked using health promoting cooking oil.
Take this dish to a whole new level of delish! Add some fresh herbs such as parsley, some juice of a freshly squeezed lemon or drizzle some olive oil after the potatoes have cooked.

- 1 lb potato organic
- 2 tablespoon extra virgin organic coconut oil or other healthy saturated fat
- 1/2 teaspoon real salt
- 1.2 teaspoon fine ground pepper or freshly ground peppercorn
- 1 tablespoon thyme organic, fresh or dried
- 1 small shallot minced
- 1/2 tablespoon juice of a whole lemon optional
- 2 tablespoon parsley organic, fresh or dried
Preheat oven to 450 degrees F. Place washed potatoes in boiling water. Add a little salt. Reduce heat and cook at a slow boil for about 15-25 minutes - until fork tender but still firm. Drain and place each potatoe on a baking sheet lined with parchment paper or place in oven safe glass or cookware. Leave space between potatoes. Gently crush each potato with a fork in criss cross motion. You want the potatoes to stay intact, but be spread out. Brush the smashed potatoes with 2 tablespoons coconut oil or chicken fat. Season with salt and pepper. Bake for 15 minutes. Remove from oven and add thyme and minced shallot to each potato. Bake for another 5-8 minutes, or until the edges begin to turn golden brown. Remove from oven and transfer to a serving platter. You may add some olive oil if you choose, squeeze a little bit of lemon juice and sprinkle freshly chopped parsley over each potato. Enjoy!
