Black Eyed Pea with Turkey, Bacon and Shrimp
dried, soaked overnight and cooked
strips, cooked and crumbled
cut in small pieces of flowerette
wild caught shrimp
deveined and cooked
additional cooked and crumbled, optional
In a safe skillet, heat butter over medium heat.
Sautee onions in butter until translucent.
Add garlic. Cook for another minute.
Stir in thyme.
Toss the shrimp around for about 4-5 minutes until cooked. Pick out the shrimp and set aside
Stir in broccoli flowerettes to the onion/garlic mix and lightly cook for 2 minute.
Add the cooked shrimp, turkey bacon and black eyed peas. Toss so that all the ingredients mix with all the spices.
Serve on a bed of rice or next to a complex carbohydrate side dish and enjoy!
