Black Eyed Pea with Turkey, Bacon and Shrimp
- 1 lb black-eyed peas dried, soaked overnight and cooked
- 1/2 lb turkey bacon strips, cooked and crumbled
- 1 head broccoli cut in small pieces of flowerette
- 1/2 lb wild caught shrimp deveined and cooked
- 1 tbsp butter organic
- 1 onion large, chopped
- 1 clove garlic minced
- 1/2 tsp thyme dried
- real salt to taste
- turkey bacon additional cooked and crumbled, optional
In a safe skillet, heat butter over medium heat. Sautee onions in butter until translucent. Add garlic. Cook for another minute. Stir in thyme. Toss the shrimp around for about 4-5 minutes until cooked. Pick out the shrimp and set aside Stir in broccoli flowerettes to the onion/garlic mix and lightly cook for 2 minute. Add the cooked shrimp, turkey bacon and black eyed peas. Toss so that all the ingredients mix with all the spices. Serve on a bed of rice or next to a complex carbohydrate side dish and enjoy!
